The amazing Camellia sinensis

Over 3000 different teas come from the plant, Camellia sinensis. This plant is an evergreen plant with three related varietals, China, Assam and Cambodia. The distinguishing characteristics can be the result of a variety of factors, including growing area, processing method and whether botanicals or flavorings have been added.

In processing, black teas are allowed to oxidize after the fresh leaves are withered and rolled. Green teas are subjected to heat to prevent oxidation, while oolongs are allowed to partially oxidize.
